Bon Appetit Pineapple French Toast With Coconut

  1. Combine eggs, crushed pineapple, milk, sour cream, maple syrup, sugar and vanilla in a blender and whip until smooth. Transfer to shallow dish.
  2. Melt 4 tablespoons butter in large heavy skillet over medium heat.
  3. Cut bread diagonally; dip quickly into egg mixture, covering completely.
  4. Arrange bread in skillet (do not crowd) and cook until browned, about 3 to 4 minutes per side.
  5. Transfer to heated platter. Repeat with remaining bread, adding more butter to skillet as necessary.
  6. Sprinkle with powdered sugar and coconut and serve.
