Bok Choy Salad

Ingredients
- 1 bok choy
- 1⁄4 cup scallion
- 1 lb chicken, cooked and cubed or 1 lb canned chicken
- 2 (3 ounce) packages ramen noodles, crushed, spice packs discarded
- 1⁄4 cup slivered almonds
- 1⁄4 cup sesame seeds
- 1⁄4 cup butter
- 1⁄2 cup olive oil
- 1⁄2 cup red wine vinegar
- 1 tablespoon soy sauce
- 1⁄2 cup sugar
Directions
- 1. Thinly slice scallions, Bok Choy leaves and stems.
- 2. Melt butter in a frying pan, add slivered almonds and crushed ramen noodles. Brown ingredients, part way through, add sesame seeds and continue to brown. Approx 5 minutes.
- 3. Mix oil, red wine vinegar, soy sauce and sugar.
- 4. In a large bowl, combine all ingredients. Enjoy.
