Ingredients
Group A
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
Group B
- 1⁄2 cup unsalted butter, softened
- 1⁄2 cup applesauce
- 1⁄2 cup sugar
- 1⁄2 cup Sugar Twin
- 1⁄2 cup dark brown sugar, firmly packed
- 1⁄2 cup brown Sugar Twin
- 1⁄2 cup egg white
- 2 teaspoons vanilla
- 1⁄4 teaspoon nutmeg
- 1 teaspoon cinnamon
Group C
- 3 cups oats
- 1 1⁄2 cups raisins
Directions
- Preheat oven to 350°.
- Whisk together ingredients from group A; set aside.
- Combine ingredients from Group B with a hand mixer on low.
- To cream, increase speed to high and beat until fluffy and the color lightens.
- Combine group A and Group B and mix until no flour is visible.
- Now add the oats and raisins, Group C; stir to incorporate.
- Fill a small cookie scoop with dough.
- Drop 1 inch apart onto baking sheet sprayed with nonstick spray.
- Bake 8 minutes (on center rack), until golden,.
- Remove from oven; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.
