Bobbie Jean's Terrell Texas Brisket

Ingredients
- 4 -5 lbs beef brisket, trimmed of fat.
- 2 yellow onions, chopped
- 2 -3 chipotle chiles in adobo, minced
- 1 cup brown ale
- 3 tablespoons tomato paste
- 1⁄4 teaspoon ground allspice
- 1⁄4 teaspoon ground cinnamon
- 1 teaspoon salt
- 1⁄4 cup brown sugar
- 3 cloves garlic, minced
- 8 red potatoes, quartered
- 1⁄4 lb baby carrots, halved
Directions
- Place Brisket in crock pot.
- Mix all other ingredients except potatoes and carrots in a large bowl.
- Pour over meat.
- Cover, cook on low for 10 hours.
- Cool to room temperature.
- Refrigerate over night.
- Skim fat.
- Add Potatoes and Carrots.
- Cover and cook on low 10 hours.
