Blueberry Strata Pie

This is a recipe I found in Virginia Hospitality Cookbook.

Yields: 1 9inch pie

Directions

  1. Drain fruits, reserving syrups.
  2. Blend cream cheese, sugar, milk and vanilla.
  3. Set aside 2 TBS pineapple; stir remaining into cheese mixture.
  4. Spread over bottom of pastry shell; chill.
  5. Blend sugar, cornstarch and salt.
  6. Combine syrups and measure 1 1/2 cup; blend into the cornstarch mixture.
  7. Cook and stir until thickened.
  8. Add blueberries and lemon juice; stir and cool.
  9. Pour over cheese layer and chill.
  10. Top with whipped cream and reserved pineapple.
