Blueberry Orange Muffins

Ingredients
- 1 (18 1/4ounce) package blueberry muffin mix
- 1⁄2 cup orange juice
- 2 egg whites
- 1 teaspoon grated orange peel
Directions
- Preheat oven to 400 degrees. Grease 2 1/2 inch muffin cups or use paper liners.
- Empty muffin mix into large bowl. Break up any lumps. Add orange juice, egg whites and orange peel. Stir until moistened, about 50 strokes.
- Fill muffin cups half full and bake for 16 - 19 minutes or until toothpick inserted into muffin comes out clean.
- Cool in pan for 5 minutes. Carefully loosen muffins from pan. Remove to wire rack for cooling.
