Blueberry Oat Muffins

Ingredients
- 1 1⁄4 cups oats (old fashioned)
- 1 1⁄4 cups whole wheat flour
- 1⁄3 cup Splenda sugar substitute
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1 cup nonfat milk
- 1 egg
- 1⁄4 cup unsweetened applesauce
- 1 cup blueberries (fresh or frozen)
- 1 1⁄2 teaspoons cinnamon
- 1 teaspoon vanilla
- 1⁄4 cup walnuts (chopped) (optional)
- 1 tablespoon sugar
- 1 tablespoon cinnamon (additional)
Directions
- preheat oven to 425.
- spray 12 muffin tins with pam baking spray.
- combine dry ingredients (except for 1 tbsp cinnamon and sugar).
- combine wet ingredients.
- fold moist ingredients to dry.
- fold in blueberries and walnuts.
- fill cups 2/3 full.
- mix together tbsp cinnamon and tbsp sugar.
- sprinkle each muffin with cinnamon / sugar mixture.
- bake for 20 minutes.
