Blueberry Oat Cake

Ingredients
- 1 cup blueberries, frozen
- 1 cup whole wheat flour
- 1⁄2 cup oat flour
- 1 1⁄2 teaspoons baking powder
- 3 eggs
- 1 1⁄2 cups brown sugar
- 1 cup butter (melted)
- 1⁄2 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 325°F.
- Coat the cake tray with vegetable oil or cooking spray.
- In one large bowl, sift together the whole wheat flour, oat flour, baking powder, cinnamon and salt.
- In another separate bowl, whisk together the eggs, sugar, vanilla and butter until creamy, adding the eggs each at a time.
- Combine the wet ingredients with the dry ingredients and mix.
- Stir in the blueberries.
- Pour the batter into the pan and bake for about 35-40 minutes or until golden brown and a wooden pick inserted into center of the cake comes out clean.
- Give it about 10-15 to sit out before serving. Best when refrigerated.
