Blueberry Muffins

Delicious blueberry muffins are a weekend breakfast family favorite. Preparation note: Fresh or Frozen blueberries can be used. Slightly beat the egg with a fork before adding. Show more

  1. Preheat oven to 400 degrees.
  2. In large bowl combine flour with sugar, baking powder and salt. Gently mix the blueberries into the dry ingredients.
  3. Combine milk, oil and egg in separate small bowl, beat with fork to mix.
  4. Make a well in center of flour-blueberry mixture. Pour wet ingredients into well. Mix with a fork, just until dry ingredients are moistened; do not over mix. Batter will be lumpy.
  5. Spoon batter using rounded 1/4 cup measure into greased muffin pan. Sprinkle top of muffins lightly with a little extra sugar.
  6. Bake for 15-25 minutes until a toothpick inserted in the center comes out clean.
