Ingredients
Muffins
- 3⁄4 cup whole wheat flour
- 3⁄4 cup all purpose flour
- 1⁄2 cup toasted wheat germ
- 2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 2⁄3 cup brown sugar
- 3⁄4 cup 2% milk
- 1⁄4 cup vegetable oil
- 2 eggs, slightly beaten
- 1 teaspoon pure vanilla extract
- 1 1⁄2 cups blueberries
Topping
- 2 tablespoons toasted wheat germ
- 1 tablespoon brown sugar
- 1⁄4 cup rolled oats
Directions
- Preheat oven to 375 degrees F; fill a muffin tin with paper liners.
- In a large bowl, combine flours, wheat germ, baking powder, salt, and sugar.
- Make a well and add in milk, oil, eggs, and vanilla.
- Mix just until combined, then fold in blueberries.
- Divide batter into the prepared muffin tins.
- Sprinkle on topping ingredients.
- Bake 20 to 22 minutes.
