Blueberry Gingerbread

Ingredients
- 1⁄2 cup shortening
- 1 cup sugar
- 1 egg
- 2 cups flour
- 1⁄2 teaspoon ginger
- 1 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 cup blueberries
Directions
- Cream shortening and sugar together; beat in egg.
- Sift dry ingredients together and stir into batter alternately with buttermilk.
- Fold berries in gently. Bake in greased and floured 9 x 5" loaf pan at 350 degrees for 1 hour and 10 minutes or until toothpick comes out clean.
