Blueberry Banana Walnut Bread

Ingredients
- 1 ripe banana, peeled and mashed
- 3⁄4 cup flax seed, ground
- 2 egg whites
- 1⁄3 cup honey
- 1 cup low-fat buttermilk
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 3⁄4 cup whole wheat flour
- 3⁄4 cup oat bran
- 2 tablespoons chickpea flour
- 1 cup blueberries
- 1⁄2 cup walnuts, chopped
Directions
- Preheat oven to 375. Prepare a loaf pan.
- In large bowl, stir together banana, flaxseed, egg whites, honey and buttermilk.
- In a separate bowl, combine dry ingredients. Fold into banana mixture and stir in blueberries and walnuts.
- Pour into loaf pan. Bake 45-50 minutes.
