Blueberry-Banana-Peanut Butter Pancakes

Peanut butter pancakes with the added flavors of bananas and blueberries.

Ready In: 20 mins

Serves: 4

Ingredients

  • 2  cups  pancake mix (I used a mix that is 180 grams per cup but I think that any mix will do)
  • 1 12 cups milk
  • 12 cup peanut butter
  • 1  egg
  • 1  teaspoon butter (doesn't matter how much as long as it is only a little)
  • 12 banana
  • 34 cup blueberries (as many as you want to add)

Directions

  1. Measure ingredients and cut half of the banana into small slices. Mix peanut butter, milk, pancake mix, and egg until blended and smooth.
  2. Set stove heat to level 4 and melt butter in the frying pan. I find a square pan easier for pancakes.
  3. Make batches of 4 small pancakes. They will break when flipping if they are too big. I recommend one ladle full per pancake.
  4. Set the stove heat to level 3 as the first batch is baking.
  5. Before flipping pancakes, add on the banana slices and blueberries. I added 2 blueberries and 1 banana slice per pancake.
  6. Enjoy with maple syrup. Be careful when eating, blueberries are hot!
