Blue Corn Waffles

Ingredients
- 1⁄2 cup blue cornmeal
- 1⁄2 cup all-purpose flour
- 1⁄2 tablespoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon brown sugar
- 1 1⁄8 cups low-fat buttermilk
- 1 large egg
Directions
- In a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar. Whisk gently to blend. (Mix may be stored at this point in the refrigerator).
- Preheat waffle iron.
- Whisk together buttermilk and egg until well blended.
- Fold the dry mix into the wet mixture until evenly moistened.
- Pour about 1 cup of batter into the waffle iron and cook through.
