Blue Cheese Ricotta Alfredo

Ingredients
- 1 tablespoon butter
- 1 tablespoon flour
- 2⁄3 cup milk
- 5 ounces blue cheese
- 4 ounces ricotta cheese
- salt
- fresh pepper
- nutmeg
- 2 green onions, white and light green only chopped (optional)
Directions
- Melt butter in a small saucepan over low heat and stir in flour.
- Slowly whisk in milk, a few tablespoons at a time.
- Stir in blue cheese until melted and heated throughout. Take off the heat and stir in ricotta.
- Add spices to taste and serve over pasta or meat with the green onions as a garnish.
