Blue Cheese and Chive Mashed Potatoes

  1. Cook the potatoes chunks in boiling water in a medium saucepot until they are fork tender for 15 -20 minutes.
  2. Drain well, and return to pot.
  3. Mash potatoes with a masher until smooth.
  4. Stir in blue cheese, butter, chives, garlic salt, and pepper until thoroughly combined.
  5. Return the mashed potatoes to stove and cook for a few minutes more until very hot.
