Blossom Beignets

I got this from a green market guy selling blossoms.

Ready In: 30 mins

Yields: 1 Batch

Ingredients

  • 1  egg yolk
  • 2  cups water, ice cold
  • 18 teaspoon baking soda
  • 1 23 cups flour
  •  squash blossoms

Directions

  1. Whip egg yolk and baking soda into the water in a large bowl.
  2. Sift in the flour and mix well.
  3. Batter should be thin.
  4. Dip blossom, twirl to coat well.
  5. Place in a pan with 2" oil and fry for 1 minute, turn and fry for another minute.
  6. Place on paper towel to drain.
  7. Sprinkle with sifted powdered sugar while still draining and hot.
  8. OR - omit sugar and serve with a small dipping bowl of berry syrup.
