Ingredients

  • 6  eggs
  • 12 cup milk
  • 1  cup flour
  • 2  teaspoons sugar
  • 12 teaspoon salt
  • 12 cup  cream
  • 3  apples, peeled & sliced
  • 2  tablespoons butter (more if necessary, for frying)
  • 2  tablespoons sugar
  • 1  teaspoon cinnamon
  • 2  tablespoons butter, small dabs
  • 1  lemon, juice of, only

Directions

  1. Beat the eggs lightly and add the milk.
  2. Combine the flour, sugar and salt. Stir the flour mixture into the egg mixture, stirring in the ½ cup of cream as you mix.
  3. Fry the apple slices in butter in a skillet.
  4. Preheat oven to 500 degree.
  5. Cover the bottom of an oven-proof baking dish, or heavy skillet, with apples.
  6. Pour the batter over slices and bake in a preheated 500º oven.
  7. When nearly done (20 or 25 minutes, or until the pancake looks like a cooked omelet), remove from oven and sprinkle here and there with a mixture of sugar and cinnamon to taste.
  8. Place dabs of butter on the pancake and return to oven until browned.
  9. Just before serving, sprinkle with lemon juice, and cut into triangles.
