Blender Lemon Pie

Ingredients
- 4 large eggs
- 1⁄2 cup melted butter, cooled
- 2 lemons, juice of
- 1 1⁄4 cups sugar
- 3 tablespoons flour
- 3 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 frozen pie shell
- powdered sugar, to garnish
- sift sugar, flour and corn starch together
Directions
- Preheat oven to 350 degrees.
- Place eggs, butter, lemon juice, sugar mixture and vanilla extract in blender and pulse until smooth.
- Pour into frozen pie shell and bake for 40-45 minutes or until set. I always put my pie on a cookie sheet to bake.
- Remove from oven and let cool completely.
- Dust with powdered sugar.
