Blanquette of Turkey

Ingredients
- 3 tablespoons butter
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 3 tablespoons flour
- 4 cups chicken broth
- 1 lb turkey, cooked chopped rough
- 2 tablespoons fresh parsley or 2 teaspoons dried parsley
- salt and pepper
- 1⁄2 teaspoon thyme
- 1 cup ditalini
Directions
- Melt butter in heavy pot. Add chopped vegtables, cook untill soft. Wisk in flour and cook 5 minutes. Add broth and mix well. Bring just under a boil. Add remaing ingredients (minus Ditalini) reduce heat and simmer 25 minutes. Add Ditalini and continue to simmer for 20 minutes or until pasta is cooked through.
