Blackberry Jam

Yields: 2 small jars
Ingredients
- 4 cups blackberries
- 1 cup sugar
- 2 tablespoons cornstarch
- 1⁄2 teaspoon lemon juice
Directions
- Combine blackberries and sugar in a pot over medium heat. Bring to a simmer.
- Strain seeds if desired, then return juice to pot, reserving 1 tbsp of juice in a small bowl.
- Add the cornstarch to the reserved juice (make sure the juice has cooled down first). Blend completely.
- Add cornstarch mixture to juice; bring to a boil.
- Stir frequently, until jam is thickened, about 15 minutes.
- Remove from heat and stir in lemon juice.
