Blackberry Cobbler

Yields: 1 8 X 8 pan
Ingredients
- 1 cup flour, unbleached preferred
- 1 cup granulated sugar
- 1⁄4 teaspoon salt
- 2 teaspoons baking powder
- 1 cup milk
- 2 cups blackberries
- 1 tablespoon butter
Directions
- Preheat oven to 400°.
- Sift dry ingredients together.
- Add the milk & beat well.
- Melt butter in a 3 " deep 8 X 8 baking pan.
- Pour in the batter & then add the berries on top.
- Bake for 30-35 minutes or until golden brown. The batter will rise to the top of the cobbler & make a light, rich crust.
- NOTE: Be sure to test the the center because it tends to be the last to bake & might be under-cooked.
