Black Hills Burgers

My husband and I came up with this recipe. He's really creative with food, more so than I am. We used buffalo because it's healthier and (we think) tastes better. For the chiles, you can use either mild or hot, but we used hot for more flavor. When you add the salt and pepper, remember to go light on the salt, because you'll be getting some salt from the bacon. Show more

Serves: 4-8

Yields: 4-8 burgers

Ingredients

  • 2  lbs  ground buffalo meat
  • 1 (4 ounce) can  diced green chili peppers, drained
  • 1  lb bacon, cooked (I used Oscar Meyer Maple bacon, but whatever you like works)
  •  salt (to taste)
  •  pepper (to taste)

Directions

  1. cook bacon to your preferred "doneness", drain on paper towels and let cool, then chop up into little pieces.
  2. drain chiles.
  3. put ground buffalo, chiles, and bacon in a bowl, add salt and pepper to taste, and mix together.
  4. form meat mixture into patties.
  5. cook burgers using whatever burger-cooking method you like, but remember that buffalo meat cooks up faster than beef.
  6. top with your favorite burger toppings and serve!
