Ingredients
- 4 ounces currants
- 5 tablespoons golden syrup
- 1⁄2 lemon, juice and grated rind
- 2 eggs
- 4 ounces soft butter
- 4 ounces self raising flour
- 4 ounces sugar
Directions
- Heat oven to 375 F.
- Grease and line 7 x 7 inch tin.
- Sprinkle currants over base.
- Mix syrup and lemon juice together.
- Pour over currants.
- Quickly beat together all remaining ingredients until light and fluffy.
- Spread batter over currants.
- Bake for 25 - 30 minutes or till firm and springy to touch.
- Cut into 12 pieces while still hot.
- Cool in tin.
