Black Beans With Feta Cheese

Ingredients
- 2 (16 ounce) cans black beans, drained and rinsed
- 1⁄2 cup diced red onion
- 2 tablespoons finely chopped of fresh mint
- 2 tablespoons finely chopped fresh parsley
- 1⁄4 cup fresh lemon juice
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 2 ounces feta cheese, crumbled
Directions
- In large bowl, combine beans, red onion, mint and parsley.
- In a small bowl, whisk together lemon juice, olive oil, garlic and 1 tablespoon water. Pour over beans and mix to combine.
- Fold in feta.
