Black Beans W/Turkey and Rice

This is an easy dinner. Serve with a side salad and you're ready to go.

  1. In a small bowl, whisk together the lemon juice, mustard, chili powder, soy sauce and tomato sauce stirring until smooth.
  2. In a large skillet heat oil over medium heat, add turkey and cook for about 5 minutes, breaking the meat into small pieces.
  3. Add the onion, green pepper and garlic and saute for 5 mnutes or until they are softened.
  4. Add mixed sauces to the turkey mixture, combining the ingredients well.
  5. Stir in the beans and cook mixture over medium-low heat for 20 minutes,.
  6. If necessary, reheat the rice. Serve over hot rice.
