Black Beans and Rice

Ingredients
- 1 cup uncooked long-grain white rice
- 2 cups water
- 1 tablespoon oil
- 1 1⁄2 teaspoons minced garlic
- 1 1⁄2 teaspoons dried oregano leaves
- 1⁄4 teaspoon crushed red pepper flakes
- 1 (15 ounce) can black beans, undrained
- 2 tablespoons diced red bell peppers
Directions
- Cook rice in water as directed on package. Meanwhile, heat oil in large saucepan over medium heat until hot.
- Add garlic, oregano and red pepper flakes; cook and stir 1 to 2 minutes.
- Add beans; bring to a boil. Reduce heat; simmer 10 minutes to blend flavors, stirring occasionally.
- Serve over rice and sprinkle with diced red bell pepper.
