Black Beans and Rice

I don't do spicy real well, but the litle bit or red pepper in this is just right for me. After the beans have simmered for 5 minutes, taste and add more red pepper if you prefer more heat. Show more

  1. Cook rice in water as directed on package. Meanwhile, heat oil in large saucepan over medium heat until hot.
  2. Add garlic, oregano and red pepper flakes; cook and stir 1 to 2 minutes.
  3. Add beans; bring to a boil. Reduce heat; simmer 10 minutes to blend flavors, stirring occasionally.
  4. Serve over rice and sprinkle with diced red bell pepper.
