Black Bean Hummus (From 1001 Low-Fat Vegetarian Recipes)

Ingredients
- 1 (15 ounce) can black beans, rinsed drained
- 1⁄4 cup reduced-sodium vegetable broth or 1⁄4 cup water
- 2 -3 tablespoons tahini
- 2 -2 1⁄2 tablespoons lemon juice
- 1 1⁄2 tablespoons soy sauce
- salt
- cayenne pepper, to taste
- 3 garlic cloves, divided
Directions
- Process black beans, vegetable broth, tahini, lemon juice and soy sauce in a food processor until smooth.
- Season to taste with salt and cayenne pepper.
- Blend garlic in, a clove at a time, to suit your taste.
- Refrigerate 1 to 2 hours for flavours to blend.
- Serve with dippers (whatever you like!).
