Black Bean Hummus Adapted from Penguin Drive-In

This recipe is from Guy Fieri's Diners, Drive-Ins, and Dives adapted from Greg Auten, co-owner of Penguin Drive-In in Charlotte, NC. This is a spicy hummus that tastes middle eastern. I think it makes a great spread for bread or serve with pita chips. It's a different flavor than you expect for hummus, but it's yummy. I didn't have black beans and substituted kidney beans and still really enjoyed it. Show more

Serves: 8-10

Yields: 2 3/4 cups

Directions

  1. Mix all the ingredients in a bowl.
  2. Puree the hummus mixture, in batches if needed, in a food processor until very smooth.
  3. Taste and season with salt.
  4. Transfer the hummus to a serving bowl and serve with pita chips.
