Black Bean and Rice Burgers(Guam)

Yields: 8 patties
Ingredients
- olive oil flavored cooking spray
- cornmeal, for dusting
- 1 (15 ounce) can black beans, drained
- 1⁄2 cup cooked brown rice
- 1⁄2 cup corn kernel
- 1⁄2 cup sunflower seeds, coarsely ground
- 1⁄4 cup cornmeal
- 1⁄4 cup wheat germ
- 1⁄2 cup celery, chopped
- 1 tablespoon oil (canola, flaxseed or olive)
- 1⁄2 cup salsa
- 1 tablespoon chili powder
- 1 tablespoon cilantro, chopped
Directions
- Preheat oven to 375°F.
- Pan spray a 14" X 16" cookie sheet and dust with cornmeal.
- In a large bowl combine all ingredients and mix thoroughly. Let the mixture stand for 15 minutes.
- Divide and form into 8 patties using wax paper and place on baking sheet.
- Bake 30 to 35 minutes or until browned and firm.
- Serve as you would traditional ones with fat free condiments such as ketchup, mustard, lettuce, tomato, red onion, pickles, etc. on a whole wheat bun. Healthy and delicious!
