Black Bean and Avocado Salsa

Yields: 3 cups

Ingredients

  • 2  cups  cooked drained rinsed black beans (can use one 15 oz can)
  • 2  tablespoons  finely chopped red onions or 2  tablespoons  white onions
  • 2  serrano peppers, minced with seeds
  • 1  small tomatoes, seeded and finely chopped
  • 1  tablespoon olive oil
  • 1  tablespoon fresh lime juice
  • 12 teaspoon salt (or to taste)
  • 1  haas avocado, neatly diced
  • 2  tablespoons  chopped cilantro

Directions

  1. In a bowl, mix all the ingredients, except the avocado and cilantro.
  2. Just before serving, gently stir in the avocado and cilantro.
  3. Adjust seasoning; serve with tortilla chips, seafood, or grilled chicken.
