Black Bean and Avocado Salsa

Yields: 3 cups
Ingredients
- 2 cups cooked drained rinsed black beans (can use one 15 oz can)
- 2 tablespoons finely chopped red onions or 2 tablespoons white onions
- 2 serrano peppers, minced with seeds
- 1 small tomatoes, seeded and finely chopped
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1⁄2 teaspoon salt (or to taste)
- 1 haas avocado, neatly diced
- 2 tablespoons chopped cilantro
Directions
- In a bowl, mix all the ingredients, except the avocado and cilantro.
- Just before serving, gently stir in the avocado and cilantro.
- Adjust seasoning; serve with tortilla chips, seafood, or grilled chicken.
