Bisquick Topped Salmon Loaf

Ingredients
- 426 g salmon (2 small cans)
- 1⁄2 cup 1% fat cottage cheese
- 2 eggs, beaten
- 1⁄2 cup onion, chopped
- 1⁄2 cup sweet pepper, chopped
- 1⁄4 cup celery, chopped
- 6 soda crackers, crushed
- 2 tablespoons seafood cocktail sauce
- 1 tablespoon skim milk
- salt and pepper
- 1⁄3 cup olive, sliced
Topping
- 1⁄2 cup Bisquick
- 1⁄4 cup milk
- 1 egg
- 1 grated carrot
Directions
- mix together and put in greased 2 litre pan.
- put grated carrot over top.
- pour bisquick on top of all.
- -- 375 degrees for 30 minutes.
