Biscuit Pizza Muffins

Delicious side dish with pasta or stand alone appetizer.

Yields: 12 pizza muffins

Ingredients

  • 8  refrigerated buttermilk biscuits
  • 30  slices  pepperoni
  • 1 12 cups  shredded mozzarella cheese
  • 1  teaspoon  italian seasoning
  • 2  tablespoons olive oil
  •  pizza sauce

Directions

  1. Preheat oven to 375.
  2. Grease a standard size 12 muffin pan or use muffin pan liners.
  3. Cut each biscuit in 9 pieces.
  4. Cut each peperoni slice into 4 pieces.
  5. Mix biscuit pieces, pepperoni pieces, cheese, spices & oil in a large bowl.
  6. Spoon mixture evenly into the 12 spots in the muffin pan.
  7. Bake x 15 minute.
  8. Serve with pizza sauce for dipping.
