Bhg Sun-Dried Tomato Burgers

Ingredients
- 1 lb lean ground beef (we like ground round)
- 1 tablespoon oil packed sun-dried tomato, finely minced
- 1 teaspoon lemon zest
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 tablespoons fresh basil, coarsely chopped (optional)
- 1 cup spinach leaves, whole
- 4 hamburger buns, lightly toasted
Directions
- In a medium bowl, lightly combine first 5 ingredients.
- Form into 4 patties.
- Grill to desired doneness.
- Place on buns and top with spinich leaves, basil (if using), and desired condiments.
- Great served with a cold beer (isn't everything?).
