Best Leftover Turkey or Chicken Casserole

Ingredients
- 1 cup carrot, cut into thin coins
- 1 medium onion, chopped
- 1⁄2 cup celery, diced
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 cup rice, uncooked
- 2 1⁄2 cups broth
- 10 1⁄2 ounces cream of mushroom soup
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 cups cooked turkey
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1 1⁄2 teaspoons tarragon
- 1 1⁄2 cups frozen green peas
Directions
- Brown onions, carrots, celery and garlic in oil until onions soften, about 5 minute.
- Add rice and saute in the oil and veggie mixture until rice is golden.
- Stir in broth, soup, salt and pepper. Cover pan and simmer 20-25 minutes till liquid is absorbed.
- Add in turkey, lemon juice, tarragon and peas.
- Pour mixture into 9x13 baking dish that has been sprayed with cooking spray.
- Bake 25 minutes at 350 degrees until bubbly hot.
