Best Hawaiian Coconut Loaf

Ingredients
- 1⁄3 cup shortening
- 2⁄3 cup sugar
- 2 eggs, well beaten
- 1 cup moist shredded coconut
- 1 cup mashed banana
- 1 3⁄4 cups sifted pastry flour
- 2 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1⁄2 teaspoon salt
Directions
- Preheat oven to 350 degrees.
- Grease a loaf pan.
- Beat shortening in mixing bowl until soft.
- Blend in sugar thoroughly.
- Add egg and beat well.
- Stir in coconut.
- Alternately add mashed bananas and sifted dry ingredients.
- Turn batter into loaf pan.
- Bake 1 hour and 18 minutes.
