Best Ever Turkey Meatloaf and Potatoes

I'm really picky when it comes to meatloaf. This is the best I have ever made. It doesn't fall apart easily and doesn't take forever to cook. My 2 year old ate 3 slices and 2 slices the next day for lunch. Huge hit. Most meatloaf recipes call for 2lbs of meat but I only used 1 because there were only two of us eating. Please, don't use real potatoes. Try the canned ones with the meatloaf, you won't regret it. Show more

Directions

  1. In large bowl mix turkey, egg, bread crumbs and seasoning.
  2. Mix well with hands.
  3. Shape into a loaf and put in 9x13 pan coated with cooking spray.
  4. Place potatoes all around meatloaf and season with salt and pepper.
  5. Bake at 375 for one hour.
  6. Let cool 10 minutes then cut into slices and serve with potatoes.
