Best Ever Carrot Cake

My MIL posted this on Facebook from another site just before my husband's birthday so I figured I kind of had to make it for him. I was a little concerned that it was so easy and had so few ingredients. I have to say it lived up to the name. Hope you enjoy.

• Serves: 16

Ingredients

• 2  cups sugar
• 1 1⁄4 cups  oil
• 4  large eggs
• 2  cups flour
• 2  teaspoons baking soda
• 1  tablespoon cinnamon
• 1  teaspoon salt
• 3  cups carrots, grated
• 1  cup walnuts

• Frosting

• 12  ounces powdered sugar
• 6  ounces cream cheese, softened
• 1  teaspoon vanilla extract
• 2  tablespoons butter
• 2  tablespoons milk

Directions

1. In a large bowl, beat sugar and oil. Add eggs and beat well.
2. Sift together flour, soda, cinnamon, and salt into egg mixture; mix well; fold in carrots and nuts.
3. Place batter in greased 9x13 pan; bake 1 hour and 10 minutes in a 350 degree oven.
4. Frosting: Beat together powdered sugar, cream cheese, vanilla, butter and milk; spread on cooled carrot cake.
