Berry (Or Cherry) Cheesecake Bars

Ingredients

  • 1 (18 1/2ounce) box  lemon cake mix
  • 12 cup  corn flake crumbs
  • 3  eggs
  • 12 cup unsalted butter, melted
  • 2 (8 ounce) packages light cream cheese, softened
  • 12 cup sugar substitute
  • 1  teaspoon  almond extract
  • 1  cup  seedless  strawberry preserves (or cherry, blueberry, raspberry, etc.)
  • 13 cup  slivered almonds (or sliced)

Directions

  1. Heat oven to 350°F.
  2. Coat 13x9 dish with cooking spray.
  3. Set aside 1/2 cup of cake mix.
  4. In a medium bowl, stir together remaining cake mix, cornflake crumbs, 1 egg and 1/4 c of the butter.
  5. Press into the bottom and partially up the sides of the greased baking dish.
  6. Combine cream cheese, sugar substitute, almond extract and remaining 2 eggs until smooth and spread over crust.
  7. Spoon dollops of preserves over cream cheese and swirl gently.
  8. Sprinkle reserved cake mix over top and drizzle with remaining butter.
  9. Bake for 25 minutes.
  10. Sprinkle with almonds and bake an additional 25 minutes or until set.
  11. Cook completely and chill for at least 2 hours.
  12. Cut into bars and serve slightly cool.
