Berry Bran Muffins

Ingredients
- 1 cup cereal milk
- 1⁄2 cup vegetable oil
- 2 teaspoons citrus zest
- 1 1⁄2 teaspoons vanilla
- 2 eggs
- 1 cup whole wheat flour
- 1 cup flour
- 3⁄4 cup sugar
- 2 1⁄2 teaspoons baking powder
- 3⁄4 teaspoon salt
- 1⁄3 cup blueberry jam
- 1 cup fresh raspberry
- vanilla sugar (Vanillin)
Directions
- Preheat oven to 400 degrees F.
- Mix milk, vegetable oil, zest and vanilla in a medium sized bowl.
- Beat in eggs
- In big mixing bowl, mix the flours, sugar, salt and baking powder together.
- Stir small bowl contents into big bowl in two to three steps.
- Stir in the jelly until evenly distributed.
- Fold in the fruit.
- Grease muffin cups well- or use paper liners.
- Pour dough into cups and sprinkle each top with vanilla sugar
- Bake for about 25 minutes, until muffins are lightly browned.
