Bella Vita Grilled Chicken Salad

Ingredients
- 1 chicken breast, marinated with olive oil and rosemary then grilled
- 1⁄4 cup fennel, shaved
- 1⁄4 cup pear, cut in matchsticks
- 1⁄8 cup parmesan cheese, shaved
- 1 fig, baby sized, cut into slices
- 2 tablespoons cashews
- 1⁄4 cup red pepper, cut into matchsticks
- 1 tablespoon red onion, shaved
- 2 cups lettuce, mixed, red romaine, arugula
- 2 tablespoons fat-free honey-dijon salad dressing
Directions
- Mix all ingredients. Place sliced chicken breast ontop of lettuce mixture. Serve with dijon vinegrette.
