Beets and Potatoes With Truffle Oil

Ingredients
- 4 potatoes (scrubbed)
- 4 small beets (scrubbed)
- 2 tablespoons truffle oil
- 1⁄4 cup butter
- salt & fresh ground pepper (to taste)
- half-and-half (as needed)
Directions
- Boil the potatoes and beets until tender.
- Drain. Let cool. Peel.
- Mash with the rest, adding enough half and half to achieve desired consistancy.
