Beets and Potatoes With Truffle Oil

YUMMY and pretty. Great for a dinner party.

Serves: 4-6

Ingredients

  • 4  potatoes (scrubbed)
  • 4  small beets (scrubbed)
  • 2  tablespoons  truffle oil
  • 14 cup butter
  •  salt & fresh ground pepper (to taste)
  •  half-and-half (as needed)

Directions

  1. Boil the potatoes and beets until tender.
  2. Drain. Let cool. Peel.
  3. Mash with the rest, adding enough half and half to achieve desired consistancy.
  4. YUM!
