Beet Dip

Yields: 4 cups
Ingredients
- 2 (8 ounce) packages cream cheese, room temperature (not lite)
- 1⁄4 white sugar
- 1⁄2-3⁄4 cup Miracle Whip or 1⁄2-3⁄4 cup mayonnaise
- 3⁄4 cup cooked beets, pureed in a food processor
- 1⁄4 cup diced onions or 1 bunch green onion
Directions
- In a mixer, beat the cream cheese, sugar and Miracle Whip or mayo until fluffy. Adjust Miracle Whip as needed.
- Add pureed beets and diced onion and mix well.
- Refrigerate until serving, to let the flavors blend.
