Beer Mop Sauce for Poultry and Fish

Yields: 2-3 cups
Ingredients
- 12 ounces beer
- 1⁄2 cup lemon juice, fresh
- 1⁄2 cup canola oil or 1⁄2 cup corn oil
- 1⁄2 medium onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons dry rub seasonings
- 1 tablespoon white wine worcestershire sauce or 1 1⁄2 teaspoons Worcestershire sauce
Directions
- Mix all ingredients together.
- If meat seems dry when smoking, add another 1/4 cup oil.
- Apply using a small string mop for barbecue or with a small pastry brush.
