Beer Battered Fried Chicken

Ingredients

  • 3  lbs chicken, cut into 8 pieces
  •  ice water
  •  vegetable oil, for frying
  • 2  cups beer
  • 2  large eggs
  • 2 12 cups flour
  • 14 cup cornstarch
  •  salt and pepper

Directions

  1. Soak chicken pieces in ice water for 30 minutes.
  2. preheat oven to 200 degrees.
  3. Fill a large pot with enough oil to reach a 2 inch depth.
  4. heat oil to 365 degrees.
  5. In a large bowl, whisk together beer and eggs.
  6. Whisk in 2 cups of flour and cornstarch and salt into the beer and egg mixture until smooth.
  7. Place remaining flour in a shallow bowl.
  8. Season the chicken with salt and pepper, then coat with flour.
  9. Transfer to the beer batter and coat.
  10. Place chicken into hot oil with tongs. Keep oil at 365 degrees at all times.
  11. cook about 15 minutes for dark meat pieces and 10 minutes for white meat.
  12. Place cooked chicken on paper towels to drain.
  13. Season chicken and serve.
