Beefy Shells and Cheese

This is a modified version of a recipe that was featured in Simple and Delicious Magazine. The original recipe called for boxed shells and cheese dinner, jar salsa, and black beans. My family doesn't eat black beans, which is why I eliminated that. This is a very quick, simple, and versatile weeknight dish that can be modified to suit anyone's taste. Show more

Serves: 4-6

Ingredients

  • 1  lb ground beef
  • 8  ounces shell pasta, uncooked
  • 2 14 cups water
  • 1 (15 ounce) jar  salsa con queso (mild, medium, or hot depending on personal taste)
  • 1 -2  teaspoon chili powder (more or less to suit your taste)

Directions

  1. In a skillet, cook ground beef until no longer pink.
  2. Drain. Return ground beef to skillet.
  3. Add shell pasta, and water. Bring to a boil.
  4. Reduce heat and cover pan.
  5. Simmer pasta and beef for 10 minutes or until pasta is tender and water is absorbed. Remove from heat.
  6. Add salsa con queso and chili powder and mix well.
