Beefy Chili

Ingredients
- 2 lbs stew meat or 2 lbs roast boneless beef cubes
- 1 large onion, diced
- 1 large bell pepper, diced
- 2 -3 jalapeno peppers, depending how spicy you like it
- 2 (15 ounce) cans tomatoes, with chili's such as ro-tel
- 1 (6 ounce) can tomato paste
- 6 garlic cloves, minced
- 1 smoked ham hock
- 1 (12 ounce) can of lager style beer
- 1 tablespoon cumin
- 1 tablespoon oregano
- 3 (15 ounce) cans of drained and rinsed beans, I used red kidney beans and black beans
Directions
- Brown in beef in skillet. Once meat is browned, place in Crockpot.
- In the same skillet, saute onions, peppers and garlic until softened. Place in crock pot.
- Add to the crock pot, tomato paste, diced tomatoes and spices and beer.
- Place hamhock in the slow cooker.
- Add beans and cook for 8 hours until meat is tender.
- Take out hamhock before serving.
