Beef Stroganoff

Ingredients
- 2 lbs beef stew meat
- 3⁄4 cup sliced mushrooms
- onion soup mix
- 1 (10 ounce) can cream of mushroom soup
- 3 tablespoons red wine vinegar
- 1⁄4 cup quick-cooking tapioca
- 1 cup sour cream
Directions
- Place stew meat and mushrooms in slow cooker.
- Combine soup mix, soup and vinegar. Stir in tapioca. Cover and cook on low 8-12 hours.
- Stir in sour cream. Remove from slow cooker and allow to cool. Label and freeze.
- To serve: Thaw. Heat and stir until smooth and hot. Serve over hot buttered noodles.
