Beef Stroganoff

Serves: 4-6
Ingredients
- 1 1⁄2 lbs round steaks, trimmed
- 1 tablespoon vegetable oil
- 12 ounces crimini mushrooms
- 1 cup red wine (something you'd drink yourself, NOT cooking wine)
- 1 cup beef stock
- salt and pepper
- 1 cup sour cream (you can use lite, but...don't)
- cooked egg noodles
Directions
- I find that slicing the meat is much easier if you do it while it is partially frozen. I slice it VERY thinly in strips. Trim as much fat from the meat as possible before slicing.
- Heat the oil in a pan.
- Cook the meat until brown.
- Add mushrooms and cook until all liquid is gone.
- Salt and pepper to taste.
- Add beef broth and wine.
- Simmer on low heat until liquid is reduced by 1/2.
- Add sour cream.
- Pour over noodles.
- Great with a green salad!
