Beef Stew With Dumplings

Ingredients

- 700 g beef
- 2 garlic cloves
- 2 onions
- 4 carrots
- 1 turnip
- 600 ml beef stock
- salt
- pepper
- 2 teaspoons mixed herbs
- 110 g spaetzle dumpling mix
- 4 tablespoons parsley
- parsley
Directions
- Preheat the oven to 160C/Gas 3. Spray a large, non-stick frying pan with oil and place over a medium heat. Add the meat and stir-fry until brown on all sides. Transfer to a medium casserole dish and add the garlic, onions, carrots, turnip, and stock. Season well, then add the dried herbs. Cover tightly and cook in the oven for 2 hours.
- Meanwhile, put the dumpling mix in a bowl, stir in the parsley, and add 2tbsp of cold water to make a soft dough. Season well and divide the dough into 8 equal pieces. Shape each one into a ball and set aside.
- Uncover the casserole and place the dumplings on top of the beef mixture. Cover and return to the oven for 20-25 minutes. Sprinkle the casserole with chopped parsley before serving.
